The adverb ~以上に (lit. "beyond; surpassing") attaches to a "base" or a "benchmark" and allows us to express that it gets surpassed in some way ("more (X) than...".
~以上に most commonly attaches to verbs and nouns, and occasionally い・な-adjectives.
E.g. きのこのホイル焼きが、思っていた以上に美味しくて驚きました。 "I was surprised because foil-baked mushrooms were tastier than I thought they would be."
E.g. 必要以上に時間をかけなくてもいいですよ。 "It's okay to take more time than necessary."
E.g. 影山以上の高校生セッターは、今の日本にはいないだろう。 "There is no high school setter who is above Kageyama in Japan at this time."
~以上に is most commonly used in both casual and polite spoken scenarios.
